The oregano ruined this seasoning. Tasted Italian had to doctor up with more cumin to eat. It needs to be left out of recipe?

Just a heads up, the “flour” in most mixes is masa, a corn flour, which has a function and is supposed to be there; it is not a scary additive or unnecessary ingredient. The masa thickens the mix so that it has the texture of, well, chili, which is not supposed to be as thin and watery as soup. Strictly speaking, it does not add the spice but is no less important and will add to the flavor, so if your homemade mix does not have masa, it is missing a key component. If you are making a mix with 2lbs of meat, then 2-3 table spoons of masa should be about right.

I checked the link to the Simply Organic chili powder and it contains silicon dioxide. What is that and is it unhealthy? I’ve had trouble finding a chili powder without it. I know it makes it free flowing but I think I’d rather have it clumpy! Please advise! Thanks for all your wonderful advice!

So where do you get the original spices? Knowing they all about high quality organic, isn’t that expensive to have enough on hand to revamp your spice cabinet?
