The oregano ruined this seasoning. Tasted Italian had to doctor up with more cumin to eat. It needs to be left out of recipe?

The masa thickens the mix so that it has the texture of, well, chili, which is not supposed to be as thin and watery as soup. Strictly speaking, it does not add the spice but is no less important and will add to the flavor, so if your homemade mix does not have masa, it is missing a key component. If you are making a mix with 2lbs of meat, then 2-3 table spoons of masa should be about right.

I just found that Ancestral Supplements has beef thyroid pills. I am going to try them and see if they help out out. Their liver pills and organs pills have helped immensely already.

It is mild to medium but not overly spicy. Just make sure to use a chili powder from sweet peppers not hot peppers to keep the heat down.
