Healthy eating doesn’t have to mean forgetting pizza forever. This gluten-free pizza recipe tastes like regular pizza but is much more filling and protein packed. The basic idea is that instead of a flour crust, you use ground beef and spices instead. The texture is amazingly similar, and this “Meatza” is great cold for breakfast the next morning (that reminds me of college!).

Gluten-Free Pizza (Meatza) Recipe

Homemade pizza with a meat crust and pizza toppings is a more filling and gluten and grain free way to make pizza.

Ingredients

  • 2 lbs ground beef
  • 2 eggs
  • ¼ cup Parmesan cheese (grated, divided)
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup pizza sauce
  • ½ cup nitrate-free pepperoni (or ham, cooked chicken or sausage, optional)
  • ½ cup onion (thinly sliced)
  • ½ cup bell pepper (thinly sliced)
  • ½ cup mushrooms (sliced)
  • ¼ cup black olives (sliced)
  • 1 cup fresh spinach
  • 2 cups mozzarella cheese (shredded)

Instructions

  • Preheat oven to 450°F.
  • Grease a rimmed baking sheet with coconut oil and set aside.
  • In medium bowl, mix together the ground beef with eggs, 2 tablespoons of the Parmesan cheese, and all the spices.
  • Mix well by hand until incorporated.
  • Spread onto the prepared baking sheet.
  • Roll or press the meat onto the bottom of the cookie sheet by hand. 
  • Put meat into the preheated oven and cook about 10 minutes until browned and most moisture has cooked off. It will reduce in size quite a bit! Just make sure it is cooked enough, you want it pretty solid.
  • Remove the meat from the oven and switch the oven to broil.
  • Spread the pizza sauce over the meat “crust” then top with the pepperoni or other meat if using, sliced veggies, mozzarella and remaining Parmesan cheese.
  • Put back into the oven under the broiler and watch closely. It will only need to cook until the cheese is melted and bubbly, about 4-5 minutes.
  • Remove, let cool 3 minutes, slice, and serve.

Notes

  • You can use a mix of Italian sausage and ground beef for the base if you’d like.
  • Use whatever pizza veggies for topping  you prefer.  I recommend putting some very thinly sliced onions on the top of the mozzarella which brown nicely and add a nice crunch.

    Eeewwww! There’s no way this much meat can taste like pizza. Just call it like it is- a giant hamburger and not try to compare it to pizza crust, haha

    I love this! I actually top my patties (usually some type of veggie burger) with some sort of avocado combo. Thus using my patty as the “bread”. It makes a great open-face sandwich (w/o bread).

    Maybe I just missed something because I didn’t see any other comments about this, but the ingredients listed show 1/4 cup of Parmesan cheese, but the directions state 2 T of Parmesan in the crust. Should I use the whole 1/4 cup in the crust, or is some reserved for topping?

    Easy to make, and I didn’t add a ton of veggies, but spinach would have been good. I wasn’t able to get it as solid as the picture, and I set off the fire alarm with the broiler oi! However, it was a filling meal! One slice lasted me half of the day! My family enjoyed it as well! Definitely a good crust alternative!

    1st I can’t believe I forgot I had this recipe! I will definitely be making this as I really like the idea of the protein. And since I buy only Grass-Fed, Grass-Finished Beef I don’t have to worry about any of the fat since it is all good for me – Of course I never have very much fat since I buy the leanest.

    Now I just have to wait til the meat thaws – I buy a bunch & freeze it. (mainly ground beef, can’t afford those steaks 🙁 🙁 :(((((((((((

    What kind of cheese do you get? I can’t find organic mozzarella or parm without cellulose gum.

    Um, how is hamburger healthier for you then, you know, bread? I mean meat has cholesterol, fat, and doctors all tell you it should be a once in a while thing, and pizza crust has grains, good carbs, very little fat(or no fat depending on how you make it) and no cholesterol. That stuff clogs your arteries, gluten does nothing unless you have celiac disease, and carbs are just the bodies best way of getting energy.
